Quinn's recette de cocktail
1 1/2 oz Giffard Mangalore
1/2 oz Yellow Chartreuse
3/4 oz pear nectar
1/4 oz passionfruit juice
1/2 oz kumquat honey syrup *
3 dashes hot yellow pepper tincture *
1 egg white
2-3 oz Mionetto Prosecco
Combine all ingredients in shaker tin except Mionetto Prosecco
Dry shake hard to activate egg white
Add ice to tin & shake hard to chill
Vertically rim chilled glass usiung lemon cheek & spicy citrus rimmer *
Top with Mionetto Prosecco
Garnish with an orange nasturtium & a reusable straw
Kumquat Honey Syrup:
1/2 cup local organic honey
1/2 cup distilled water
4 kumquats halved & deseeded
1/2 barspoon of orange blossom water
Combine all ingredients in a pot over medium high heat & stir until honey dissolves. Let sit for 3 hours then double fine strain into glass jar or bottle.
Hot Yellow Pepper Tincture:
6 oz 100 proof Vodka
6 hot yellow peppers dried
Place all ingredients into a small mason jar & store in a dim place for 21 days shaking occasionally.
Double fine strain into clean bitters bottle.
Spicy Citrus Rimmer:
I cup of dehydrated spent grapefruit & orange peels
1 tbsp espelette pepper powder
1 tbsp cayenne
1 tbsp Mexican chili powder
1 tbsp Maldon salt
Collect any extra grapefruit & orange peel trimmings throughout service.
Dehydrate all the citrus skins for at least 24 hours.
Blend the dried citrus peels until powdered & strain through a fine mesh sieve.
Combine citrus dust with spice powders & salt until well mixed.
Store in a mason jar.

My cocktail is imagined as a progression from my previous submission, The Golden Pentagon. After a lovely sunset aperitif, the Mionetto Tickler offers spicy complexity that is bold enough to be enjoyed with the primi or secondi courses. The notes of cinnamon, cardamom & chili in the Mangalore provide a pungent spiciness and mild savoriness that is balanced by the exotic fruit juices & honey syrup. The effervescence of the Mionetto amplifies the tantalizing experience of the heat and makes it linger on the palate. My cocktail is inspired by Italian lifestyle and the tendency to indulge in lavish meals & revel in each sip & bite. It’s a celebration of sourcing the most quality ingredients possible to create a sublime moment. Each ingredient in the Mionetto Tickler increases the unique flavour and playful mouthfeel of the cocktail while still allowing the subtle notes of the Mionetto Prosecco to shine. It’s bright, bitter, zippy & bubbly, meant to tickle your senses.
