Dave's Cocktail Recipe
10ml passionfruit puree
34ml salmonberry gin liqueur*
18ml lemon juice
87ml Mionetto prosecco
– combine the first four ingredients in a shaker with ice and shake briefly.
-double strain into a Flute filled with good ice.
-Top with Mionetto and garnish with an orange cheek shield (or just an orange twist, if you want to keep it simple)
Macerate freshly harvested Salmonberries and Spruce tips with caster sugar overnight.
Combine with equal parts (by weight) of Glendalough gin in a blender.
Blend on high for 15 seconds and strain through a coffee filter.
The unusual measurements of the ingredients are to represent the company being 134 (10ml & 34ml) years old this year, being founded in 1887. (18ml & 87ml)
What inspired the drink?
When I was researching Mionetto for this project, the word that stood out more than any other was "Passion". Being born in Australia, this word almost always leads me to think of passionfruit, which was a favourite of mine when I was growing up. I decided that my drink was going to be an expression of heritage. Passionfruit suited Australia in my mind. For Canada, my chosen home, I used Salmonberry and Spruce tips, which are abundant at this time of year, and something I forever associate with Canadian Summer. For Italy, I needn't add anything but Mionetto - a truly remarkable expression of Italy's famed Prosecco. And finally, the heritage of cocktails. For this, I used the French 75 as inspiration, including Gin and Lemon juice to balance the Mio 134.
