Harry's Cocktail Recipe

0.75oz Homemade Nocino (picked from my garden) (Green walnuts, lemon balm, apple mint, tiki spice blend)

0.75oz Bittered Orange Liqueur
1.00oz Mandarin juice | 0.5oz Calamansi juice | 0.5oz Japanese green tea & apple mint syrup
3.00oz Mionetto Prosecco Brut
Garnish with an ‘M for Mionetto’ orange peel and a green walnut sprig

Direction
In a chilled coupe glass, pour in the Nocino, fresh mandarin and calamansi juices and the green tea apple mint syrup. Gently pour in the Mionetto Prosecco and gently stir the cocktail to combine and garnish with an orange peel and green walnut sprig if possible

Nocino Infusion
In a large mason jar fill up with washed and sliced green walnuts, lemon balm and apple mint (everything from my garden) with 2 tablespoons of my own Tiki spice blend – cinnamon, peppercorn, nutmeg, ginger, allspice, salt. Add a 750ml of Vodka and leave it in a dry and dark cupboard for 3 months. Every few days gently shake the infusion and taste. After 3 months fine strain the infusion until the mixture is clean of sentiments, date and label. Cheers!

What inspired the drink?

Mionetto is one of the oldest wine producers and was founded in 1887, just north of Venice in the heart of the Prosecco region. The Mionetto Prosecco is a beautiful fruity bouquet of apples and honey aroma, which pairs perfectly with most foods, soft bubbles, dry and light!

I wanted to create something that symbolizes Italian heritage like a spritz or Bellini, which is light, fruity (orange) and bubbly with a little complexity using the Nocino but allowing the Mionetto Prosecco to shine through the drink.

My cocktail creation was inspired by Gozzilla, this was an exceptionally low-budget movie that only got released in Italy (trust me it was bad!) back in 1977. I have always been a massive fan of Godzilla and watched all the movies, so I thought I would create something that would be a Japanese Italian inspired because one, they have a great working relationship as countries as well as food and family are both factors to their life and upbringing.
