Joe's Cocktail Recipe

2 oz Mionetto Prosecco Doc Treviso Brut
1 oz Redemption Rye
0.25 oz Campari
1 barspoon Salted Absinthe (15:1)
1 barspoon Grapefruit Oleo Sacharrum
Oleo: peels of 2 grapefruits, 1 cup sugar, 2 oz grapefruit juice)

What inspired the drink?

For my own palate, I love that the Old Pal is drier than the Boulevardier. It uses rye whisky and a bitter Italian liqueur, which checks two of my boxes; however, if I were to choose one cocktail to drink on my own for the rest of time (which I would happily do), I would need something that brings brightness. After all, perhaps the most important aspect of a cocktail is the way it makes you feel. Enter Mionetto. The combination of warm and bright flavours in the Prosecco, combined with a perfect balance between sweet and dry, gives me a feeling that lands somewhere between excitement and tranquility, while staying close to happiness. I like to call that feeling Peace. The Only Friend I Need pays tribute to both the flavours and the balance of the Brut, while focusing on the very same emotions brought out by the base of the cocktail. The cocktail focuses less on balancing sugar with acidity than it does balancing brightness and excitement with stability and comfort.
